
Ingredients
1 pound boneless pork roast
1 envelope (from a 2.6 ounce box) onion soup mix
16 mushrooms, thinly sliced
1 teaspoon of butter
4 crusty French rolls, split
Preparation
Preheat the oven to 350 degree Fahrenheit. Coat the pork roast with the soup mix, then place it in a shallow pan and roast for 45minutes, until the meat thermometer inserted registers 155 degree Fahrenheit. Remove the roast from the oven and let it rest for 5 minutes. Scrape any pan drippings into a microwave-safe measuring cup; add water to measure 1/3 cup. Cover and micro cook on high for 20-30seconds until it starts boiling. Place the mushrooms in a microwave-safe container, top it with butter and cover with a plastic wrap. Micro cook on HIGH for about 45-60 seconds until the mushroom is tender. Then slice the roast and place in rolls; spoon over mushrooms and some of the pan juices. Serve immediately and enjoy.
