Watermelon is a highly nutritious fruit which is rich in Vitamin C, B6 and B1, potassium, and magnesium, and, at only 48 calories per cup, it is an ideal low-fat thirst quencher and you can enjoy this fruit by trying this wonderful Watermelon berry granita and enjoy good and healthy living.
Recipe for 8 serving:
7 cups ¾-inch cubes, seeded watermelon.
1/2cup sugar.
2 tablespoons fresh lemon juice.
1 large ripe strawberry, hulle pinch of salt.
Procedure;
Blend watermelon in batches until smooth.
Return 4 cups puree to blender. Add next 4 ingredients. Pour mixture into 13 by 9 by 2 inch metal baking pan. Freeze until icy at edge of pan for about 45 minutes. Whisk to distribute frozen portions evenly.
Freeze again until icy at edge of pan and overall texture is slushy, about 45 minutes. Whisk to distribute frozen proportions evenly. Then freeze until solid, about three hours. Using fork, scrape granita down length of pan, forming icy flakes. Freeze at least one hour (can be made one day ahead. Cover; keep frozen).
