Softened butter (175kg)
Castor sugar (175kg)
Eggs (beaten) 3
Self-raising flour (175kg)
Method:
1. Grease with oil the bases of sandwich tins
2. Pre heat the oven up till 180?
3. Cream both butter and sugar until it becomes light and fluffy
4. Fold in the beaten eggs in three steps, beating well after each addition.However, if the mixture curdles add a spoonful of flour along with each addition of eggs.
5. Sift flour into the mixture and fold in gently with a large metal spoon
6. Divide the mixture between the prepared tins and bake in the oven for about 20 minutes or until the tops of the cakes are firm when pressed with your fingertips.
Note:
The cake should spring back to shape when pressed with your fingertips.
