
What can be better than chocolate brownies filled with chunks of semisweet chocolate and toasted nuts? It’s this; Chocolate Chunk Brownies.
To prepare an 8 by 8 inch pan of this brownie, you’ll need:
• 1/2 cup of butter or margarine
• 1 cup of granulated sugar
• 2 eggs
• 1/4 cup of unsweetened cocoa powder
• 1 tablespoon of vanilla flavour
• 1/2 cup of all-purpose flour
• 1/2 tablespoon of baking powder
• 1/2 cup of toasted almonds, pecans or walnuts or hazelnuts
• 4 ounces (oz.) of semisweet chocolate squares.
Here are some tips on how to toast your almonds or nuts.
Toast the almonds or other nuts until the internal colour becomes ivory or lightly tan. Then remove them from the pan immediately.
Procedure:
• Melt the butter and add the sugar, eggs, cocoa and vanilla in a big bowl.
• Combine the flour and baking powder. Then stir it into the chocolate mixture.
• Toast the nuts by spreading it in a single layer in a shallow pan. Bake at 325 degree Fahrenheit for 10 to 15 minutes.
• Coarsely chop the chocolate squares, keeping them in large chunks
• Stir in the nuts and chocolate squares to the batter
• Spread the batter in an 8 by 8 inch baking pan that is lightly greased.
• Bake at 350 degrees Fahrenheit for 35 to 40 minutes or until a toothpick comes out barely moist
• Cool it in a pan on a rack. Cut it into equal squares and serve.
